Bran Flax Muffins

These are another favourite of mine and make the all the time. The recipe is actually on the back of Bob's Red Mill Flaxseed Meal which you can find at any grocery store.
3/4 c. Flaxseed Meal, 3/4 oat bran, 1 c. brown sugar, 2 tsp. baking soda, 1 tsp. baking powder, 1/2 t. salt, 2 tsp. cinnamon, 1 1/2 c. shredded carrots ( I buy them already shredded), 2 apples peeled and shredded, 1/2 c. raisans ( I sometimes omit), 1 c. nuts, 3/4 c. milk ( I use soy milk), 2 eggs beaten, 1 tsp. vanilla.
Preheat oven to 350.
In one bowl add apples, carrots, eggs, milk and vanilla and mix well. In other bowl add all dry ingredients and mix well. Add wet to dry, mix ( don't over mix) add to sprayed muffin cups. ( I use the most natural spray from the grocery). Cook for 15-20 minutes. Let cool for 5 minutes and then try to lift muffin out of tin to cool even more.
Yields about 15 muffins.
