I cook and create mostly from my head with a bit of inspiration from my girl friend, Susan who talks so passionately about food. She makes me hungry every time I talk to her.
So tonight, is hot and Susan was talking about black beans so, I made a black bean salad with a lemon vinagrette.
Ingredients: 1 can black beans, 3 green onions, chopped, 1/2 cup fresh parsley, 1 cuc, sliced in half and then chopped in medium dice, 1 cup sliced mushrooms, two tomatoes chopped in medium dice, zest and juice of one lemon and I would say a few T. of EVOO. Dash of Himilayan pink salt, 1/2 block of Feta cheese, toss and serve.........delicious, healthy and light.
