I just came back from an amazing power yoga class and was starving as usual..
2 egg whites, 1 whole egg
2T Feta cheese
salt and pepper to taste
Put eggs and milk, in bowl mix well, add touch of skim milk, s&p. Put heat on medium melt 1 t. of yogurt butter.
Add eggs to pan and then sprinkle feta, salsa and quinoa over the top. cover and cook on low for 3-5 minutes.....
Absolutely, delicious and full of protein,carbs and a touch of fat.
